You are in luck! These days, you do not have to buy Acrobat Professional to do this.
Download the free Pdf Exchange Viewer, which has all the annotation tools you need, including a highlighter. And it will save all your highlights too.
Very fast and small pdf viewer with annotation tools that are on par with the ones in the $299 Acrobat Professional. There is even a portable version, which you do not have to install and take with you on a usb stick.

Depending on the version of Adobe you're using, there's a highlight tool available in the tools menu.

You need the full version of Adobe Acrobat (not Acrobat Reader). Then you just use the highlighter tool.
