You can use XML, XSLT and FOP. Check the link below.

"Formatting Objects Processor (FOP) is an open source Java API that can convert your XML data into reports in PDF format, as well as such other relevant formats as TXT, SVG, AWT, MIF, and PS. The software is developed under the Apache XML project and is free to use."

A more permanent solution (and easier to use on-the-fly) is to get the full version of Acrobat with PDFWriter. The Adobe PDFWriter gets installed as a "printer" on your PC. Then, from any application, select that "printer" and choose a PDF name/location to "print to". You can then easily create PDF's from Word, your browser, etc...

This also works in the *nix environment.

Adobe Acrobat now has a program that may be useful to you. It is called "Create Adobe PDF Online." You can actually use the internet to create all of your PDDF files. The first 5 files are free so you should give it a try. Click the link below to be taken to the adobe site.
