Apple uses a Linux-based web server and not a Macintosh O/S Server.

Macintosh servers aren't made for being a webserver. They are mostly made for being a way of connecting multiple macs in a system. Also, I'm sure apple doesn't need a UI for their webserver.

Linux is a better server operating system than Mac OS X server.

If it's any consolation to you, Apple is always running an experimental build of the MacOS on a Cray to test the MacOS for crashes. In no way could a MacOS run a super-computer. same goes for an Apple sever. The MacOS is made to make ROM calls to the onboard chips.
