in illustrator CS5 and CS4 , there is no crop, there is Artboard tool ( Shift+O) and you can make many boards on one space , crop the images and works and if you you want to export it as image go to :

File > Export > Choose th image format ex:JPG > and don't forget check on ( use Artboards ) all or the number of your image that you crop it .

I always use the clipping mask, what you do is you take the pen tool, or paint brush, or pencil tool and you trace around what you want from the image you are cropping. Make sure the shape that you want is in front and select both the shape and image being cropped. then go under object (up on the bar at the top) and go all the way down to clipping mask > make. You can also use a shape such as a circle to crop something into a circle, and also letters if you want something shaped like a letter. Just make sure the image you want cropped is behind the shape you want it cropped into. I hope this helps!!!
