Install XP first, then CentOS

When installing CentOS, it will detect that Windows is already installed, so will install boot-loader allowing you to dual boot between both OS's

Install XP on NTFS partition and CentOS on ext3 + swap partition (at least 256 MB) to support virtual memory when there is not enough RAM to store the data your system is processing

Install Windows first, because each operating system installs its own boot loader, and the Windows boot loader doesn't dual boot by default.

First XP, then CentOS.

Windows first. Always.
