I am working with Illustrator CS5 in OS X 10.6.6 (Snow Leopard).

I have tried saving it through various methods (Save As, Export, etc.) and nothing has worked. I have tried importing into Photoshop and saving/exporting as a Photoshop EPS from there, and still the file always ends up with a white background after the save.

I can achieve the desired result if I save as a PNG, but I really do require the EPS file format.

I have been Googling for hours - please help me before I pull all of my hair out!

If you are saving the Illustrator file as an EPS then there shouldn't be a white background unless you've drawn a white box behind the image/artwork. Bear in mind that every time you open the EPS up in Illustrator you will see the blank (white) canvas behind the contents.

If you open the EPS file in PhotoShop it should actually open on a new layer without the white background. Saving an EPS file in PhotoShop will flatten the file giving it the white background. If the artwork is created in Illustrator save it as an EPS from Illustrator.

you will possibly desire to make the image a .PNG or a .GIF. For larger high quality, use a .png. additionally, you're able to have asmaller report with those. it is rather useful to have made this in Photoshop, I have no dealings with identity, so it might desire to be a backgroung layer or something alongside those lines, once you created the iimage did you desire to have a sparkling historic past?
