I'm looking into getting a tablet for taking notes in class. I'm taking a CS class in which we are learning Python on Linux/Ubuntu off of a USB that has been provided for us.
Is there any tablet out there that I can use to boot Linux/Ubuntu on?

Android is most certainly _not_ based on Ubuntu. Just thought I'd clear that up.
Some tablets can run Ubuntu, but I don't know of any that will boot off a USB drive. I'm not saying they don't exist, just that I don't know of any.
But another alternative to writing/running Python scripts is http://ideone.com/ which is also free. You can type out your programs and run them in the browser, even including lines of input to feed the program if it asks for input. The only thing is if you need to use third-party modules or if you're constructing a GUI or something like that, you won't be able to do that here. It prints to stdout and reads from stdin and that's about it.
Good luck!

All Android tablets are Linux and Android is based off of Ubuntu. You can install a Terminal application from the market place and Python. You can root your Tablet to get access to the full filesystem too if you want. I would recommend the Samsung Galaxy Tab 2, that's what I have, I would recommend it because it has a MicroSD card slot for extra storage space.

it is honestly highly exciting. i have searching into operating the aircrack-ng suite on my Archos pill yet from my analyze I concluded that the sluggish proccesing means mixed with low RAM would have made it highly inconceivable (would have take days/weeks/per chance months to run). Im no longer conscious if there are certain specs mandatory through aircrack to run... i'd be highly fascinated if this worked and if it became powerful. And it is all assuming that the chipset is also positioned right into a computer screen mode..
