If I insert text into an adobe illustrator document will that text be automatically a vector image?

Do I need to click anything else to make it vectorized? Or will it be a vector object as long as I save it as a eps.

It will be a vector object by default. Actually even on Photoshop unless you click render layer to a text layer it won't get rasterized and will be kept on vector format. Those are only valid for true-type fonts (.ttf) not for bitmap fonts.

It must be converted to outlines in order to be a vector shape. If you do not do this and bring the document to a different computer without that font, it will not show properly.

nope. even if you save as eps it will stay as live text.
once you have the text formatted, using the direct select tool, go to Type/ create outlines. then, select/object/ stray points. this will get rid of the 'blank spaces' that didn't convert to outline.
