in microsoft word, it's called spacing (single/double)..
I don't know what it's called in illustrator

In Illustrator and many other layout/design programs, this is known as leading. It's an old printing term from when typesetting was done by a compositor creating metal type (lead) line by line - these were then put together to make the pages. To add more space between the lines, literally a thin strip(s) of lead was added as a spacer between them.



In Illustrator select your text and open the Character palette.



Adjust the leading field which looks like 2 A's underneath one another with arrows between the baselines.

The palette that pops up would have icons and a few crammed in and empty fields. It has tooltips, so retaining your cursor over an icon for a 2d will inform you what it somewhat is for. the only with 2 A's stacked is the foremost field... adjust the values there.
