Java is more versatile. I haven't used PHP in a while, but I had always heard that it didn't scale well

I'm assuming you mean php vs Java servlets and JSP java server pages. If it is just a web site you can use PHP but if it is a big system then use Java technologies. I'm old time so I don't know about the newer stuff like Ruby and Phython but like the others say, you should look at them too.

Either is in high demand. My husband is in IT security and php seems to be higher in demand at this time. As you well know, technology is forever changing and you are constantly upgrading. I would do some research in companies you hope to work for and see what platforms they use. By-the-way my husband required both java and php but he is a private contractor.

It depends on what you are trying to build. Language wise I would recommend Java, however for scalable web applications, more applications are written on PHP. For good web languages though, you should look at Ruby, Python, or Node JS.
